Fish Brine

Our brine is easy to use and produces a quality product with little effort. Do not mix with water! Just coat your fillets with the dry brine and let it sit in the refrigerator. The brine will draw moisture from the fish and make a thick syrup that flavors and prepares your fish for the smoker. The spices are balanced for salmon but will enhance most other types of fish as well. Also works great for Jerky! Watch for additional flavors coming soon.

Creamy Cole Slaw

A light and creamy Cole Slaw mix that will turn your cabbage and other shredded vegetables into a delicious addition to any plate.

This bag of mix will prepare four large (apprx. 8 cups of shredded cabbage!) batches of cole slaw.  It is packaged in a reseal able bag for convenient storage and use.   It is simple to prepare.  Use 3 Table spoons of Alaskan Gourmet coleslaw mix, 1 cup mayonnaise and 2 tablespoons vinegar, stir together well and pour over shredded cabbage.  Toss and enjoy!

This is the cole slaw recipe we served in our fish and chips restaurant for years.  We had customers that came in just to buy a quart of coleslaw.  We found that many of our customers preferred a sweeter ‘slaw so we often added a can of crushed pineapple to the mix.
